What can I do if I think that my grandfather's new wife is trying to kill or help his demise along faster?

Sorry but he is an adult and legally permitted to make decisions for himself. There is nothing you can do UNLESS you want to try to make a claim that he is the victim of elder abuse. (And if there is an unfounded result after an investigation, you can pretty much guarantee that he will withdraw from all of you.)
